INGREDIENTS:
* cheddar cheese, cubed
* ham, chicken or turkey breast cubed
* kabob sticks
* green pepper, optional
* cherry tomatoes, optional
DIRECTIONS:
1. Cut the cheese and sandwich meat in even cubes. Wash the tomatoes and peppers and cut the peppers into bite-size chunks.
2. Thread meat, cheese and vegetable alternately on the kabob sticks.
3. Refrigerate until ready to eat.

INGREDIENTS:
* 1-1/2 cup vegetable broth (homemade or canned)
* 1 can (15oz) navy beans (or equal amount cooked pre-soaked beans)
* 1 can (15oz) sweetened tomatoes (or equal amount fresh, simmered, or freshly chopped)
* 1 cup cooked brown rice
* 2 – 3 scallions
* 1 T oregano
* 1 T butter or olive oil
* 1 T basil
* 1/4 t turmeric
* Salt (optional)
DIRECTIONS:
Start by sautéing the scallions and herbs in the butter or olive oil.
Add the tomatoes and simmer for 10 minutes. Add the beans, rice and vegetable broth. Simmer the soup for 30 minutes, adding more broth or water as needed.
Basic Chicken Salad Recipes

Try these basic chicken salad recipes to turn a plain old sandwich into a tasty and easy meal.

INGREDIENTS:
* 2 boneless/skinless chicken breast halves (cooked and cut into pieces)
* 1/4 cup mayonnaise
* 1/2 cup frozen peas (cooked)
* ½ cup carrot (finely grated)
* 1 tablespoon fresh chopped parsley
* Salt and pepper to taste (optional)
DIRECTIONS:
Bake the chicken breast for approximately 20 minutes (until no longer pink and cooked through). Chop into small pieces.
Boil frozen peas according to package instructions, drain and cool. Place chicken, peas and all ingredients in large bowl and combine fully.
Serve on bagels, pita, or any favorite bread.
