Taco Recipe

Kids love these tacos and they are easy and fast to make. To save even more time, brown a double batch of hamburger meat and keep half in the fridge or even freeze it. Use it for tacos, spaghetti sauce and any other recipe you have that calls for browned ground beef.

INGREDIENTS:

* 1 pound ground beef
* 1 package taco seasoning mix
* 1 can refried beans
* 1 package hard or soft taco shells
* 1 cup chopped tomatoes
* 1 can olives
* 1 1/2 cups shredded lettuce
* 1 1/2 cups shredded cheddar cheese
* 1/2 cup sour cream
* 1/2 cup salsa

DIRECTIONS:

Brown Ground Beef, Drain and add Taco Seasoning following the directions on
the package. In the meantime heat the refried beans in a saucepan or the
microwave. Spoon meat and beans into Taco Shells and add toppings.

Pesto Pasta Recipe

This pasta recipe couldn’t be easier or faster. It is one of my standbys for a quick and easy dinner when we get home late and everyone is hungry.

INGREDIENTS:

*1 16-ounce package bow tie pasta

*1/2 cup pesto sauce

DIRECTIONS:

Cook pasta according directions on package and stir in pesto.

Optional Add ins: Chicken, Sun Dried Tomatoes, Olives, Or Anything Else That

Mexican Style Cheese Enchiladas

These mexican style cheese enchiladas will quickly become a favorite in your house at dinner time. They are quick and easy to make and who could resist all the cheesy goodness?

INGREDIENTS:

* 1 (8 ounce) package cream cheese (softened)
* 2 cups shredded cheddar cheese
* 1/4 cup green onions (thinly sliced)
* 6 flour tortillas
* 1 (16 ounce) jar mild salsa

DIRECTIONS:

Place cream cheese in bowl and beat with electric mixer until smooth. Add 1 cup of the cheddar cheese and onions. Mix well.

Spread each tortilla with a portion of the cream cheese mixture down center of tortilla. Roll up and place, seam side down, in a baking dish. Repeat with remaining tortillas until cream cheese mixture and tortillas are used up. Pour salsa over tortillas. Sprinkle remaining 1 cup of cheddar cheese over salsa and tortillas.

Bake at 350F for approximately 20 minutes or until everything is heated through and cheese is melted and bubbly.
