Lattice Top Apple Pie

Apple pie is an all American standard. Make it special for a special occasion or just to have fun with the kids with this lattice top apple pie.

INGREDIENTS:

* 8 cups peeled and sliced apples
* 2 tablespoons all purpose flour
* 1 cup sugar
* 1 teaspoon cinnamon
* ½ teaspoon nutmeg
* Dash of salt
* 2 teaspoons fresh lemon juice
* 2 tablespoons butter
* 1 egg yolk
* 1 tablespoon water

DIRECTIONS:

In a large bowl combine apple slices, sugar, flour, cinnamon, nutmeg, salt, and lemon juice. Place mixture into pie crust.

On a lightly floured surface roll remaining pastry dough and cut into strips. Place strips on top of apple pie making a crisscross pattern.

Mix the egg yolk and water in a small bowl and lightly brush the top of the pie. Bake for approximately 45 minutes.

Chocolate Kiss Cake

INGREDIENTS:

* 2/3 cup sugar
* 2/3 cup light brown sugar
* 3/4 cup butter
* 3 eggs
* 1 large bar baking chocolate
* 1 teaspoon vanilla extract
* 2 ½ cups all-purpose flour
* 2 teaspoons baking powder
* ½ teaspoon salt
* 1 cup milk
* 1 bag of chocolate kisses

DIRECTIONS:

Preheat oven to 350°F.

Butter a 13 x 9 inch baking pan, then lightly dust it with flour. Cream the butter in a large bowl, (using a hand mixer), then add both the brown and regular sugar as well as the vanilla. Continue beating until they are well combined and the whole mixture is creamy. Add the eggs – one at a time – and mix well after each added egg.

Combine the flour, salt and baking powder in a separate bowl. Slowly work the flour mixture into the butter and egg mixture. Gradually work in the milk and continue mixing until everything is well combined.

Coarsely chop the baking chocolate and fold it into the cake. Pour the batter into the baking dish and bake for 30 to 35 minutes until the cake is golden brown and done. Decorate the cake with chocolate kisses.

Banana Cake Recipie

Try this simple banana cake recipie. The cake is delicious and very portable. Perfect to take to school, the office or even for a picnic.

INGREDIENTS:

* 2 cups flour
* 1 1/2 teaspoons baking powder
* 1 teaspoon baking soda
* 1/3 cup butter (softened)
* 1 cup sugar
* 2 eggs
* 2 ripe bananas mashed
* 2/3 cups plain yogurt
* 1/2 cup chopped walnuts (optional)

DIRECTIONS:

In a bowl combine flour, baking powder and baking soda. In a separate bowl mix butter and sugar until well combined.

Add eggs and mashed bananas to butter mixture. Add to flour mixture along with the yogurt and mix together well (until smooth).

Spoon batter into lightly greased baking pan and top with walnuts (if using). Bake at 350 degrees for about 35 minutes or until baked through.
