What To Do With All Those Hard Boiled Easter Eggs?

Did you color too many Easter Eggs this year? We definitely did. We had so much fun coloring and decorating them, I didn't even think about that fact that we should really only have fixed as many eggs as we could easily eat within a week.

Since we did most of our Easter egg decorating last Saturday and Sunday, we are definitely starting to run out of time on eating them. Hard-boiled eggs usually last a good week if they are refrigerated.

So we've gotten pretty innovative in using up all these colorful hard-boiled eggs.

Egg Salad
The old standby - peel six or seven hard-boiled eggs and make a batch of egg salad. For a different spin on the egg salad, warp it in a tortilla instead of using white bread.

Potato Salad
We used quite a bit of egg in potato salad earlier this week. It's a great way to use up those Easter Eggs without too much of the egg taste.

Chef Salad
Chef salads make for a great lunch. Not only do you get to use up the eggs, but also leftover slices of the Easter ham or turkey.

Breakfast Burrito
Chop up some hard-boiled eggs and mix them with cooked potatoes and some cooked sausage or chopped ham. Put everything on a flour tortilla, top with a little cheese and salsa, wrap and you have a great breakfast burrito.
