Just for Mom - All about Cucumbers

For some reason I have come across lots of cucumber recipes lately, so I thought I'd share a few.

Here is a asian inspired cucumber salad. It's a great addition to any grilled dinner, or serve it with some salmon covered with sesame seeds for a light lunch.

Asian Cucumber Salad

Ingredients:

8 cups thinly sliced cucumbers
1 tbsp salt
2 green onions, sliced
1 garlic clove, minced
2-3 tbsp soy sauce
2 tbsp vinegar
1 tbsp vegetable oil
1 tbsp sesame seeds, toasted
1/8 teaspoon cayenne pepper

Directions:

Place cucumber in a colander. Set the colander on a plate; sprinkle cucumbers with salt and toss. Let stand for 30 minutes. Rinse and drain well. In a bowl, combine the onions, garlic, soy sauce, vinegar, oil, sesame seeds and cayenne. Add cucumbers adn toss to coat. Cover and refrigerate until serving.

Cucumber Eye Soak


Ingredients:
Sliced Cucumber
Bowl of Ice

Directions:

Allow cucumber slices to cool on the ice for a few minutes. Place a cucumber slice over each eyelid and relax for 10 to 15 minutes.


Yogurt Cucumber Parsley Facial

Try this quick and easy Facial any night of the week.

1 Tbsp. Plain yogurt
1 Tbsp. Cucumber
1 Tbsp. Parsley

Puree the cucumber and parsley finely and mix with the yogurt until smooth. Cover your face with this creamy mask. This will rejuvenate your skin as it moistens. Leave the mask on for approximately 15-20 minutes for best results. Rinse with water
